Yet again, this is why I :heart: LOVE:heart: hungry-girl.com, she just did a tribute to Fiber One and showed how you can re-create all our favorite guilty pleasures into low calorie HEALTHY FOODS! I am so impressed. Can't wait to make them all. I have used Fiber one to bread Tilapia and it was wonderful so I am really looking forward to this.     I love hungry-girl.com! I used to be obsessed with her site, though I'll admit, I've yet to try a lot of the recipes that I've bookmarked. I will be exploring the recipes a lot more this month!

    I was actually just talking to my husband this weekend on how ridiculously high calorie grand food like onion rings and mozzarella sticks are! Now I want to have people over as an excuse to make them! You are all invited! :o)

    I just made the onion rings..... WOW.... I am so happy with how they turned out!!!!! Not only are they crunchy, salty, onion-y goodness they were really easy and I only baked them for 30 min.

    You need a large cookie sheet for these people, it makes a lot of rings! I used a white onion but you know what I bet a sweet onion would be great!

    SIDE-NOTE...

    I had Minestrone soup at Olive Garden today, only 100 calories!!!! Verified this with the restaurant too.
    WATCH OUT for their salad though, it packs over 1,800 sodium, just avoid it.

    Also, I bought and tried for the first time Vita-top Muffin tops today.... "Deep Chocolate", 100 calories and ABSOLUTELY DELICIOUS!!! I found them at Target.

    I like the Vitatop muffins a lot. I've only tried Deep Chocolate, though.

    Hungry girl is great. I've used her stuff a lot for parties.

    for the vegetarians, use marinated (and squeezed) extra firm tofu instead of dairy or meat. works like a charm. my bf & i used to make "hot wings" with the tofu and they're simply scrumptious.

    the only thing i don't like about her recipes is she uses a lot of substitute products, rather than whole foods. maybe some of the whole foods have a few more calories, but they also boost better nutrition, especially when you get them from accountable sources. if you only shop at the supermarket, then these recipes are fine; but for someone like me who avoids the supermarket as much as possible, these aren't the best recipes.
