This blogger makes comfort food healthy (and they are all really easy too). I try recipes from tons of healthy blogs all the time and most I would never make again. Literally everything I've made from this blogger has been delicious and satisfying. Your man will love this Sloppy Joe Casserole and I promise you don't even need to tell him it's healthy. He won't know. Especially if you use a food processor on those veggies...it just looks and tastes meaty and delicous.

You are so welcome. I LOOOVED it. We went out to dinner the night after I made it and I was sad because I really really wanted to eat those leftoevers. Lol. Try those Emily bites recipes...it's not "high-brow", just delicious. If he wants to eat two portions, that's probably fine and you will likely be happy with one and maybe a salad or side of steamed veg. The Chicken Parm Casserole of hers got rave reviews at my house as well.0 -
On a serious note, just wanted to add/say that last I checked, guys were humans and humans tend to eat food. So in other words, likes and dislikes cannot be distinguished based on gender or marital status.0

I have been slowly making changes to the meals we already eat and eating smaller portions and more veggies. I did just tell my junk food loving husband yesterday, either you support me and help think of meals I can make that you would like or you can make your own dinner. Truth is I am not making anything gross or weird. Lots of white meat and veggies. I still make some of their favorites. When it comes down to it my health is more important than his taste buds. I have rarely been happier than I am now. Finally losing weight and feeling great. My kids are going to be healthier too. There is no way I am turning back now for anyone.0

My husband can be pretty picky as well, and he generally does not approve of vegetables, so I can relate. Here are a few recipes that have been winners in our house:

same here. I made her Jalapeno popper stuffed chicken for my boyfriend and he couldn't believe it was low calorie.0 -
I like all the recipes I cook, but I'm not a picky eater.
IMHO, your problem isn't that your husband is a dude, it's that he's a picky eater with a high metabolism. I have similar issues with my kids, so here's my advice:
- Work portion control and serving size. Have an undressed green salad on the table and some steamed vegetables, and if he eats more meat and starch, that's fine, because you can eat more greens.
- Generally reduce dressings and cheeses, and start substituting flavors for added calories. Salt, pepper, garlic, lemon juice, lemon pepper, Old Bay seasoning, etc. Add it tableside if he doesn't like it.
- I generally go for a lean meat, a starch, and lots of greens. I eat more of the meat and greens and less of the starch, and it works out fine.
- Find out what he likes, and explore flavors around there. If he's super picky (no vegetables, no fish), you may be stuck with lean beef, chicken and pork in various preparations, but that's all good stuff.
- A George Foreman grill is actually pretty handy during the Polar Vortex.0 -
Last night I made stuffed cannelloni. I made my cannelloni from scratch but you can buy oven ready, no boil cannelloni at the store.
12 Cannelloni noodles
300g ground beef
2 tbsp. Italian seasoning
4 tbsp. parmesan cheese
1 cup meatless spaghetti sauce (I made homemade for low cal and low sodium)
2 cups cooked rice
Mix everything (except the noodles) together. Stuff cannelloni noodles. Place in glass baking dish, cover with pasta sauce or cheese and bake 350 for 1 hr. You will have some stuffing left over, just throw it on top.0
