    Oh I forgot to post. They turned really well. Full recipe I used was

    9 eggs
    1/4 cup 2% milk
    7.5oz of diced ham
    40g of onions
    56g of shredded reduced fat cheddar

    96 calories 1g carb 5g fat 9g protein

    I had to use liners and it got messy though (my muffin pan is a bit damaged), lol.

    LOL about the liners!

    Sounds great and the cals are so low!!!

    I am cooking the steak quiche's tonight and will post the calories and a pic when they are done.

    I'm actually thinking they will last a while in the fridge. I mean... eggs last forever. Ham or sausage lasts quite a while... cheese too... milk isn't too bad. I'm sure 5 days is plenty (and I know they won't last 5 days here).

    I know some people who make some and freeze them though.

    So I made a batch with steak and another with chicken...

    Both tasted OK but with no natural fat in the meat, we determined the sausage quiche tasted better. However, with a little salsa on them, the steak and chicken quiche were just fine.

    I think the cals were around 130 for each.

    Have made these,usually with fresh mushrooms,onion,peppers & fresh spinach.Saute the veggies just till al dente,mix with rest of ingreds.I use eggs & egg whites. After baking,let them cool to room temp. I wrap each in plastic wrap,then put several in a Baggie. They freeze fine. Remove wrapping to heat in microwave.
