    To lighten up the chocolate cheesecake minis:

    use 4 oz of 1/3 less calorie cream cheese
    4 oz. plain non fat greek yogurt
    1/3 cocoa
    1/2 teasp. vanilla extract
    1/4 cup sugar
    1 egg
    12 chocolate or vanilla wafers

    makes 12 at 75 calories each without any extra topping.

    Cheesecake minis lightened up some MORE! 53 calories each:

    8 oz nonfat plain Greek yogurt (I weighed it out on my food scale)
    1/4 cup sugar
    1 egg
    1 teasp vanilla extract
    12 vanilla wafers.

    Preheat oven to 325

    Place a cupcake paper in each of 12 spaces of a muffin tin(s)

    Place a vanilla wafer in the bottom of each cupcake paper.

    In a medium bowl combine the yogurt, sugar, egg and vanilla extract. Whisk until smooth. Spoon about 2 tablespoons batter on top of each vanilla wafer. Bake 25 min. cool and refrigerate.

    quarter package (8g) sugar free, fat free cheesecake pudding mix
    Stir and eat.

    Makes an AMAZING cheesecake flavored dessert with the texture of a heavy mousse. TO DIE FOR! 175 cals 23g protein(!) 15g carb, and 0g fat.

    A quarter of a cup would only be 44cals giving plenty of room for a "crust' and/or fresh fruit. I plan to make parfaits with strawberries and nectarines when summer comes.

    when i have a cheesecake craving i just buy the lowest fat version of philadelphia cream cheese and add slenda or some other sugar subsitute, stir and eat........ my god its amazing........ :heart: :heart:
