To lighten up the chocolate cheesecake minis:
use 4 oz of 1/3 less calorie cream cheese
4 oz. plain non fat greek yogurt
1/3 cocoa
1/2 teasp. vanilla extract
1/4 cup sugar
1 egg
12 chocolate or vanilla wafers
makes 12 at 75 calories each without any extra topping.0 -

Cheesecake minis lightened up some MORE! 53 calories each:
8 oz nonfat plain Greek yogurt (I weighed it out on my food scale)
1/4 cup sugar
1 egg
1 teasp vanilla extract
12 vanilla wafers.
Preheat oven to 325
Place a cupcake paper in each of 12 spaces of a muffin tin(s)
Place a vanilla wafer in the bottom of each cupcake paper.
In a medium bowl combine the yogurt, sugar, egg and vanilla extract. Whisk until smooth. Spoon about 2 tablespoons batter on top of each vanilla wafer. Bake 25 min. cool and refrigerate.0 -

1 cup fat free greek yogurt
quarter package (8g) sugar free, fat free cheesecake pudding mix
Stir and eat.
Makes an AMAZING cheesecake flavored dessert with the texture of a heavy mousse. TO DIE FOR! 175 cals 23g protein(!) 15g carb, and 0g fat.
A quarter of a cup would only be 44cals giving plenty of room for a "crust' and/or fresh fruit. I plan to make parfaits with strawberries and nectarines when summer comes.0 -

when i have a cheesecake craving i just buy the lowest fat version of philadelphia cream cheese and add slenda or some other sugar subsitute, stir and eat........ my god its amazing........0
