what is your favorite vegetable ?

I love cauliflower mashed with a little of the hot water from when you boil the cauliflower, a little butter/margarine whatever your caloric intake permits, and seasoning of your choice. Good ol' fashioned S&P is always good.
Green beans steamed with balsamic and a touch of salt.
Asparagus coated in olive oil and grilled with seasoning.
Broccoli steamed with salt and lemon juice.
Stir fry's with aparagus, red bell pepper, and onion with a little splash of soy sauce.
Summer veggies are a different story but it's winter so I'll leave it at that.

oh my heaven and heck...
My first thought was CAULIFLOWER
then NO! Peas! NO! Asparagus! No! Avocado (i don't care that it's a fruit) NO! Corn! NO! POTATOES!
Umm...i don't know... i like the above the mostest... i think.

i luff almost all of them!
current top five would be
- black kale ( = dinosaur kale = lacinato kale = cavelo nero) - you can eat this variety raw in salad (see *) or make kale chips
- spinach (love it sauteed w/ garlic + olive oil w/ a bit of lemon juice)
- beets (roast them, add them to salads)
- brussels sprouts (roasted, or pan sauteed with scallions, then add lime juice!)
- string beans (blanched, add to a salad w/ dill, cherry tomatoes and almond -or- oven roasted w/ cumin!)

Broccoli, Asparagus, Onion, Green Peppers, Red Peppers, Squash....I pretty much love them all! Even Okra
Also, my sister recently introduced me to adding fresh squeezed lemon to my broccoli...WOW. It is so good!0 -
I'm strong to the finich, cause I eats me spinach!
I like it any way I can get it. I always substitute it for lettuce on sandwiches.0 -
LOVE mushrooms esp shiitake and portabello, but any kind really.

Zucchini prepared all kinds of ways, from steamed to grated and turned into patties.
Sweet corn on the cob
Eggplant is soo versatile and so good!
Asparagus sauteed with lots of black pepper and some salt
Raw spinach
Collard greens
Roasted garlic eaten as a pate
I also love beans (kidney, black beans, butter beans, lima beans)

I forgot about fried okra...OMG heaven!
I haven't had those lately, but on the occasion I do indulge in them.
I also like them cooked steamed along with steamed fish or in soup.0 -

vegetables are my favorite vegetables lol..the only thing i really dont like are cucmbers. but aspargus, mushrooms, peppers, lettuce, carrots, celery, broccoli, brussel sprouts, cabbage, tomatoes, onions, green beans, corn, peas.....you get the idea. when i lived alone there were days that i would have a can of veggies for dinner cause i didnt want to cook anything else!0

I'm a big veggie fan! My faves are...
Peas - I could live on them!
Onions - sauteed. Yummmmm...
Mushrooms - see above!
Sweet potato - so tasty any way you cook it.
Going over all these has now inspired me to up my veggie intake!0 -
It's so much easier to list the ones I DON'T like.... (so, those are: sweet potatoes, cooked carrots, okra, eggplant that isn't grilled or breaded, rutabegas, kohlrabi, and creamed pearl onions)0

carrots, green peppers, peppers, spinach, onions, potatoes, tomatoes, mushrooms and garlic. all but cauliflower and brussel sprouts yuk! :P0

My favourite is probably broccoli or potato but I almost never eat them. What I eat the most: spinach, cucumbers and carrots. I eat a ton of spinach lately, and just found a better way to get my fix by mixing it with banana for a smoothie(you don't taste the spinach, but get all your essential vitamins from the spinach).0
