If you like potato and leek soup, add cauliflower to that, and cut back on the potato. Or add cauliflower and broccoli to some chicken broth and simmer till soft. Puree it and add salt and fresh ground black pepper. It's amazing.0

If you want flavour,,,below is an excellent recipe that is low fat. You can reduce by leaving out or reducing the olives.
1 head cauliflower
1 lemon
Green olives 1/2 to 1 cup
1 tsp minced garlic
Cherry tomatoes 2 cups sliced
Extra virgin olives oil 1/4 to 1/2 cup
White vinegar 1/4 cup
Oregano
Salt and pepper
Boil water and pour over cauliflower, let soak for 8 to 10 min. Drain and mix with tomatoes and olives.
Mix olive oil, vinegar, oregano, juice of lemon, garlic, salt and pepper.
Pour dressing over veggies, mix well and let sit in fridge for 2 hours. Enjoy!!!0 -
