Looking for a delicious fresh salsa to use on my eggs in the morning :) Share your fave please!

    I make salsa all the time, but I don't have a recipe. I just chop stuff up that I think will taste good when combined.

    four jalapenos
    one small white onion
    clove of garlic
    half of a hass avocado
    two Roma tomatoes
    cilantro
    salt
    lime

    boil the jalapenos and the onion until just about soft, add the tomatoes and garlic and boil until tomatoes start to lose skin
    drain all water and remove the tomatoes skins if you like, combine in the blender with the cilantro salt and the juice of one lime
    pulse if you like chunky, or blend well otherwise.

    perfect salsa to eat with eggs!!!!!

    Ok, doing this from memory, haven't made in a while, but always a favorite.

    1 large can of whole tomatoes
    1/2 large onion
    garlic clove
    2-4 Serrano peppers, seeds and membranes out if you want less heat
    juice of a lime
    salt and pepper to taste
    bunch of cilantro

    I make this in a blender.

    I drain the tomatoes and put liquid in blender, reserve tomatoes
    add onion, quartered, garlic clove, add peppers, lime juice, salt & pepper and pulse until chopped
    Then add tomatoes, pulse, add cilantro and push to bottom and pulse again until it's at the consistency you like.

    Probably not what you're looking for, buts its different and easy! Love to make it at night and use it for breakfast after its marinaded. Really cheap too, usually have everything in hand.

    1 can whole corn kernels drained
    1 can black beans drained
    2 Roma tomatoes diced
    1/2 cup red onion diced
    1 fresh jalapeño diced

    Then I like to throw some olive oil, like juice, handful of cilantro, black pepper, and a clove of garlic in my nutribullet. After its blended I pour it over the veggies and mix until coated. Let sit in the fridge over night. No idea what the calories are, but should be easy to figure out.

    Tastes great with eggs, chicken, pork, or sometimes I just eat it like a salad.

    I like mine hot, like darn near nuclear. :explode:
    7 pepper sweat
    7 peppers of different types, heats and flavors.
    1- 2 medium tomatoes
    1/2 onion
    1-2 cloves garlic
    cilantro ( 1/2 to 1 bunch, leaves only)
    salt to taste
    maybe a scant teaspoon of brown sugar

    toss in food processor, whirl until desired consistency

    the last batch was 1 pepper each of bhut jalokia, goronong, jalepeno, chiliepeno, willie pepper, ahi crystal, jaloro. but use what you have. Roasting the tomato, onion and garlic adds a nice dimension. A splash of basalmic vinegar adds a nice pop.

    Try roasting the peppers in any recipe for a different angle.

    Peaches and screams:

    2 15 oz cans of peaches in heavy syrup
    2 goronong ( Yellow Savina or habeneros do well but have that aftertaste)
    1/2 tablespoon brown sugar ( more to taste)
    1/2 teaspoon ground cinnamon ( to taste)

    Blend in food processor until smooth: really good on seafood and chicken and I Double dare you to try it on ice cream or dip an oreo cookie in it! THis one is sneaky, draws you back and becomes addictive.

    How about just some fresh and simple Pica De Gallo?

    4 Roma Tomatoes, seeded and diced
    1/2 red onion, finely diced
    1/2 jalapeno, seeded and finely diced
    2 garlic cloves minced
    juice of one lime
    1 tablespoon of olive oil
    4 tablespoons fresh cilantro
    1 teaspoon kosher or sea salt
    1/2 teaspoon black pepper

    Combine everything and let sit an hour before serving.
