    1 cup fat free greek yogurt
    quarter package (8g) sugar free, fat free cheesecake pudding mix
    Stir and eat.

    Makes an AMAZING cheesecake flavored dessert with the texture of a heavy mousse. TO DIE FOR! 175 cals 23g protein(!) 15g carb, and 0g fat.

    A quarter of a cup would only be 44cals giving plenty of room for a "crust' and/or fresh fruit. I plan to make parfaits with strawberries and nectarines when summer comes.

    I actually made this tonight...I only had the sugar free/fat free cheesecake pudding so I had to add a bit of Splenda and vanilla extract to it. You really cant eat much more than 1/4 cup..it's so rich! I put sliced fresh strawberries on top. Amazing!

    Another variation: Chocolate cheesecake minis: If chocolate wafers are available, use instead of vanilla wafer in the bottom of each cupcake paper. I couldn't find any, so I used vanilla wafers.

    Make as above for plain cheesecake minis except add to the cream cheese batter 1/4 dark cocoa powder, and a tablespoon or 2 of milk or
    1/4 WHAT of the cocoa powder? Teaspoon? Tablespoon? Container? :bigsmile:
