This recipe has become a recent favorite of mine, so I thought I'd share! I love that it's high in protein. It also happens to be low in carbs for all you low-carbers out there! It's very customizable; I just made this with what I had on hand. The main secret is using greek yogurt instead of mayo (you won't miss the mayo, trust me).
Recipe makes 2 servings. You'll need:
2 large eggs, hard boiled, chopped fine
1/4 cup plain nonfat greek yogurt
1 dill pickle spear, chopped fine
1 tsp yellow mustard
Salt, pepper, paprika, or other sesonings to taste
Any other veggies you want (onion, cabbage, etc.) chopped fine
Stir together all ingredients in a bowl until well mixed. Serve however you'd like; I usually eat mine on whole wheat bread for a sandwich, or use a whole wheat tortilla to make a wrap. Makes 2 servings.
Per serving: 88 calories, 2g carbs, 5g fat, 9g protein
I often eat both servings at once Enjoy!

As others have mentioned - in the UK a large egg I'd expect to be at 100 calories.
Also, the non fat greek yoghurt has only slightly less calories than the thicker extra-extra light mayo, so I'd be tempted to just go with the mayo.0
