    I made these the other day and they are DELICIOUS! I froze them and have been eating one every day :). One question though - they were pretty tall when I took them out of the oven but totally fell while cooling, anything I can do to prevent that? I did open the over a couple times while they were cooking, could that be the problem?

    And an even lower calorie version: 65 calories each, makes 12:

    12 vanilla wafers
    4 oz. 1/3 less fat cream cheese
    4 oz plain non fat Greek yogurt
    1/4 cup sugar
    1 egg
    1 teasp. vanilla extract

    Preheat oven to 325 F

    Place 12 cupcake papers in muffin tins
    Place a vanilla wafer in each paper, flat side down.
    combine cream cheese, yogurt, and sugar in a mixing bowl. Beat on medium speed, add egg and vanilla. Beat until very smooth. Spoon a scant 1/4 cup of batter into each cupcake paper to make 12. Bake about 20 minutes. cool and refrigerate. Can top each with a teaspoon of fruit spread, jam or apple or pumpkin butter, not included in calorie count.

    Along the same lines ...............Green Mountain Greek Yogurt Cream Cheese Spread .......50% less fat & more protein. Wal-Mart sells it.
