Real Home Fries (note the lack of quotes)

Here's my recipe for home fries that I often make on the side burner for the family when I'm grilling massive amounts of meat.
1 bag of Russet Potatoes
1 1/2 quarts of canola oil
salt to taste
Cut all the potatoes into wedges
Heat the oil until in crackles and pops when you toss in a drop or two of water
Gently drop in about 1/2 of your potato wedges
Cook until they puff and turn light brown then scoop out using a mesh skimmer or slotted spoon
Drop onto a plate with a few paper towels to soak up the extra oil, and salt to taste
Let cool
Enjoy!
ETA: *cough cough*, thank you Cranky. When you're done salting the first 1/2 of the wedges drop in the other 1/2 of the wedges and repeat. I'm usually too busy eating and often don't remember this part of the process until I've popped open another IPA

Put the paper towels on a baking sheet, then put an upside down cooling rack on top of them. Throw the potatoes on the cooling rack when they are done. The paper towels will absorb the excess oil, but the cooling rack will keep the fries from actually touching the paper towels, so they stay crispier.0

I find that covering the pan for a brief period while they're cooking will help develop a nice crust on them. I also add finely chopped onion and use salt, pepper ,paprika & a touch of "slap yo mama" seasoning on them. Occasionally, I will shred the potatoes and shape them into patties for the more hash browns version as opposed to the home fries version.0
