Grilled veggies. I season and bake broccoli, cauliflower, carrots, and asparagus. When I make salmon, I put it in a salad with veggies and light dressing.0

I usually do steamed veggies and brown rice.0

I grill summer squash and zucchini in a panini pan and usually eat it with cod, salmon, or tilipia. One of my favorite dishes. Don't need potatoes all the time. Even rice goes well with fish.0

Well, potatoes aren't too bad if you bake one and eat it with the skin on. Use Greek non-fat yogurt and chives as topping. Other options:
Corn salad:
3-4 ears fresh yellow or white corn on the cob - quickly blanch in salted water (abt 2-3 min) and cut off kernels.
1 box cherry or grape tomatoes, sliced in half
1/4 red onion, diced
1 bunch basil, torn or jullianned
chopped Italian flat leaf parsley
salt, pepper, garlic powder to taste
1 ounce crumbled feta
1/2 cup red wine vinegar
1/4 cup olive oil
1 teaspoon dijon mustard
Or
Whole wheat couscous
Brown rice
small baked yam
baked acorn squash
steamed zucchini
Whole wheat penne tossed w/ chopped steamed veggies and 1 ounce feta
MY FAVE:
roasted root veggies:
4-6 small red and gold beets, skinned and cut in quarters
1 small yam, skinned and cut in slightly larger pieces than the beets
handful of brussell sprouts cut in half
1 large carrot, cut in large chunks
1 parsnip, cut same as carrot
Place all, except beets in 13 x 9 casserole dish and spray or toss with a bit of olive oil, salt, pepper and dried thyme. Then add the beets.
Bake 375 oven, stirring occasionally until browned and done, abt 35-45 min.0 -
I wanted to add that you can eat a small baked potato topped with fresh chunky salsa. It's under 200 calories and filing! Or top your baked pot with non fat cottage cheese, green onion and ground turkey or chopped veggies for dinner. It's not bad for you!0
