Sweet Potato Recipe

I love love love sweet potato. Can you give me some healthy recipe ideas?

    I love mashed sweet potatoes. Peel and cube them. Place them in a pot with chicken stock to just barely cover the potatoes. I also like to throw in a couple of cloves of garlic. Simmer about 10 minutes until the potatoes are tender. Drain, reserving a little bit of the cooking liquid. Mash. Add salt and pepper to taste.

    Grilled sweet potatoes are also awesome. Slice the potatoes about 1/2" thick. Oil your grill and grill a couple of minutes per side. Great as a side with grilled chicken and veggies (and keeps your kitchen clean for a meal!)

    i coat sweet potatoes in balsamic vinegar and a touch of sugar ( optional), and then roast with rosemary.

    They make a great soup too. I add some carrots and leeks and throw in a little chili a some garlic.

    They are also amazing dry roasted and there is this recipe, which is one of my favs!

    I add sweet potato cubes to my stir frys. I just cook them first with a bit of cinnamon and add a bit of water and cover to let them soften a bit, then I add all my veggies and chicken and make my own peanut butter sauce with balsamic vinegar, water and soy sauce. So good!I also sometimes add black beans.

    I love this recipe and made it last night.

    You don't need to get all fancy with a baggy and fresh rosemary.

    Just mix normal rosemary and all the other ingredients in a bowl and bake it.

    Super easy, so simple, but so delicious.

    Honestly the only reason I made it is that I was craving it, and the only reason I was craving it is that it was delicious.
