75cal mac and cheese
1 pkg House food tofu shirataki noodles (macaroni shaped) (40cal)
2 Tbsp Kraft grated cheddar cheese (looks like Parmesan but is cheddar) (35 cal)
Rince noodles and then pan fry in a bit of water, after a few minutes add the cheese and let simmer until not watery anymore. Add pepper to taste.
I experimented with this today and it was actually pretty good! Not as good as real mac and cheese of course but great if you need something low in calories and takes less than 10min. You could even adjust the amount of cheese to suit you.

The cheese doesn't get weird from the excess water? I've put them in a dry pan many times but they always still remain a little wet.

I got mine at Metro.
The extra water/cheese mixture boiled down and the noodles were dry. (prob put about 2 tbsp of water in the pan)0 -

Cauliflower and cheese was a staple of my childhood...not because my parents were trying to find a low-carb alternative to mac & cheese, but because they had to figure out a way to get me to eat some veggies. Broccoli and cheese too (but just the tree tops...none of those nasty stalks...probably because the tree tops did a better job of holding more cheese).
Great. Now I want cauliflower and cheese...and broccoli and cheese.0 -

This gives me the sads.
You can make a lower fat bechamel, top the whole thing with more cheese and bake. Still get the real cheese and deliciousness, but are able to control some fat and sodium. Win win.0 -

one serving of mac and cheese is 150 calories….you concoction is 75…I would rather eat the real thing and find 75 calories in my day for the full serving of the real thing...0
