Lasagna for Under 200 kcal!
That's right... I came across this recipe and couldn't believe it until I made it. It makes a massive amount of food to the point where the entire tray is barely over 400 kcal
Peel two green zucchini and discard the skin... Using he peeler, continue to peel the rest of the zucchini into strips.
Place a layer of zucchini in a glass pan or a bread pan.
For the next layer, use some skim milk ricotta or fat free ricotta cheese.
Another zucchini layer
Layer some fresh or frozen chopped spinach leaves
Another zucchini layer
Browned 99% fat free ground turkey
Another zucchini layer.
Add more of the same layers as needed to reach the top of your pan and/or finish the zucchini
Top with some tomato sauce and bake at 350 for about 45 mins.
Unreal! Zucchini will taste just like noodles and the whole dish is insanely healthy and yummy.

I used to make a zucchini and summer squash casserole that was really good. I need to see if I can find that again.0 -
i usually like to eat "the real thing" instead of alternatives to dishes but i've done this before with eggplant and zucchini and it was seriously delicious. i prefer it over "regular" lasagna because i can add more cheese and sauce since there's no pasta. i panfried the veggies beforehand though to speed up the cooking. agreed this isn't really "lasagna" but i guess it gets that name just by the way it's assembled.0

Yep I do a healthy take on lasagna with roasted veggies (zucchini, red pepper, sweet potato, eggplant), a lower cal white sauce and a meat sauce. Layer, add a sprinkling of cheese on the top and bake. It's so delicious.0

I made a dish like this a few month ago. It was really delicious. However I would not call it Lasagna, because it does not even come close. The zucchini strips are different and delicious, but also don't taste like pasta....at all.0

Alrighty... I have to defend the title. I should have said "lasagna alternative" I freely admit, but let's not nitpick and just see it for what it is... An attempt to provide a healthy alternative to a favorite and delicious dish.
And Italians will not weep. Zucchini is an integral ingredient in Italian cooking. The lack of pasta in a layered dish is not a big deal for Italians.

Come on guys, they already admitted they should have called it Lasagna alternative. I did get my hopes up coming in, but it still sounds good regardless. I love zucchini, so I'm going to bump this for later.0

Good recipe!!! I made this last night and my boyfriend who is highly picky even liked it. It might not technically be lasagna, but it does satisfy the lasagna craving!!! Thank you for sharing (Now if we can figure out the garlic bread option!)0
