    Sweet! I will try this. I make something similar. More calories though. I found a handy Garam Masala recipe online too. I'll include it for those who would prefer to make it themselves. It makes more than you would use in a single dish.

    Pork Aloo Baingan Saag
    2 Tbsp Extra Virgin Olive Oil
    32 oz. Pork loin, trimmed
    254g onion
    1 Serrano chili pepper (with seeds)
    15g ginger (grated or minced)
    15g garlic
    3 tsp garam masala (to taste)
    1 tsp cumin
    1 tsp corriander
    1 tsp garlic powder
    270g sweet potato
    500g eggplant
    32 oz frozen spinach
    2 cups nonfat Greek yogurt
    1 tsp kosher salt (if needed)
    1/2 tsp cayenne (if needed)

    Garam Masala:
    1 TBS ground cumin
    1.5 tsp ground coriander
    1.5 tsp ground cardamom
    1.5 tsp ground black pepper
    1 tsp ground cinnamon
    .5 tsp ground cloves
    .5 tsp ground nutmeg

    Cook pork in olive oil. Add onion, Serrano, ginger and garlic. Add garam masala, cumin, corriander and garlic powder. Add sweet potato and eggplant. Add spinach. Mix in yogurt a little at a time until it's incorporated. Add salt and cayenne at the end only if they're needed. (They usually aren't)

    440 calories, 27 carbs, 17 fat, 716 sodium, 41 protein, 7 fiber, 11 sugar

    6 huge servings

    serve over cauliflower, fresh grated or frozen mashed

    (stats do not include kosher salt or cauliflower)
