It's not about carbs, it's calories in vs. calories out.

currently around 250-280g. (as that is where I will be in a calorie deficit with adequate protein and fat)

Carbs don't determine weight loss. It's about the calorie deficit. Weight loss isn't linear, so just because you don't lose one week, doesn't mean you won't the next. If you just started working out, you could be getting water retention

Today, I had 194g of carbs, and I will still lose weight, because I am eating at a deficit.

If I wanted to lose weight, would probably drop carbs to 850, when weight loss stalled drop to 800 etc.

Anywhere form 150g (low day) to 250 (high day) depending on how I fill in my calories once I get my 50g of fat and 100g of protein.

I normally end up somewhere in the 100-150 range. It's not my focus though. I'm mostly just interested in calories and protein.

My goal is 200+ a day.
Echoing what was said above; unless there's a medical need to cut carbs, you can still lose weight eating a decent amount per day. It's all calories in and calories out.

Are you weight training or doing primarily cardio? It's important to look at other factors like inches lost as muscle has a tendency to hold more water. Perhaps look at other measures like how your clothes are fitting!

Are you eating back any of your exercise calories? If you're only eating 1,200 calories but exercising vigorously 6x per week you may be entering into borderline starvation mode.

I watch protein more than carbs but my target is around 200 grams. Sometimes I get more, sometimes less. Doesn't matter.

Macros are for energy and nutrition, calories in/out are for weight loss.

Weight loss is not linear, and you will not lose weight every single week.

Your diary isn't open...so it's really hard to help. Unless you have a medical issue that requires limiting carbs - they are part of a balanced diet.

There are 4 macronutrients. A high level explanation of each of their functions is:

Protein, which is required for muscle retention/growth
Fat, which is required for healthy body functions
    Carbs, which provide energy
Alcohol, which provides for embarrassing photos

One would only limit their carb consumption so they could hit their required macro goals and still stay within their calorie goal...

...unless you prescribe to some low carb diet, which more often than not is totally unnecessary.

Unless, say, they had something like PCOS or...then they might also opt to limit their carbs, or carefully select them.

I don't count carbs at all. Only calories. I've lost just fine. And I have PCOS.

I would say on average though, I eat between 150-210 grams per day but I don't count them or try to adhere to a certain number. I do try to make better choices and pick whole grain things. That's about it.

As few as poss - buts that's personal preference.

For weight loss it really doesn't matter - as long as you are eating in a deficit you should lose weight.

For health - well that's a different issue - make sure you hit your protein as a priority and then split your carbs and fat to suit your taste and lifestyle.
