Cauliflower!
Roasted or in Curry Sauce.0 -
Snow Peas or Sugar Snap peas, steamed. Or my all time favorite, raw with veggie dip.0

I'm a HUGE fan of chinese broccoli. It's awesome in stir frys and wide rice noodle dishes!
More conventional favorites of mine are tomatoes roasted in a tiny bit of olive oil and salt/pepper (awesome in pasta), and sweet potatoes; they're super easy to make into fries! I also like to cut them up, put a little olive oil on them and montreal steak seasoning, then roast them. Nom nom nom.0 -
Mushrooms. In a full (healthy version) English, with a stir fry, in a stew. Love em.0

It would be really tricky for me to name just one!!!
I think it would have to be carrots. Brilliant cooked (boiled or roasted) and as a perfect low calorie snack eaten raw or used with a dip.0 -
Brussels sprouts... and even if you don't think you like them, this recipe will rock you to your veggie core...

I've been buying a lot of pattypan this summer. Love it Sautéed, grilled or roasted. I bought some at the farmers market today and she mentioned stuffed, so now of course looking for recipes for that!0

Fruit....:drinker:0 -
Love veggies. Favorites are spinach and mushrooms. I eat spinach every morning with mushrooms and two eggs scrambled together. I also like big spinach salads for dinner with either sauteed chicken or hot dogs. I love to make an easy "stir fry" with Italian sausage, mushrooms and spinach sauteed in butter and hot sauce. I also put mushrooms into marinara sauce over zucchini noodles and I buy portobello mushroom caps and stuff them with a variety of things.0

I love most veggies, but my fave is broad beans, I would eat them everyday if I could0
-
I love most veg, although mushrooms are probably my fave! I eat green beans and broccoli most days!0
-
Broccoli, my fav0
-
I love most veg but yes Broccoli is probably my favourite although I hear it is in fact a flower. I like it lightly steamed with a sprinkle of salt and squeeze of lemon juice.
Another favourite would be the various forms of summer squash which I like best roasted.0 -
spinach as palak paneer.0
-
Carrots. I dice and boil them.0
-
Tomatoes except that technically they are a fruit
Peas - Raw or in Pea soup which is the yummiest soup ever and can be eating hot or cold0 -
I can't really call these my "favorite" veggies because there are so many to like but these are often overlooked. They are all deep red/purple veggies and are quite nutritious.
Red peppers -- in salads, pastas, roasted, made into sauce, etc.
Red cabbage -- as coleslaw, sauteed sweet and sour, etc.
Beets -- roasted, pickled, Harvard, grated raw in salad, etc.0 -
I love fresh asparagus, green and red peppers, cauliflower and broccoli, raw. These are just a couple of veggies I like. The asparagus, drizzle some olive oil, salt, pepper and parm cheese on it. Bake at 400 for 10 minutes. The cauliflower and broccoli, dip it ranch0
-
It is fresh peas out of their pods! Yum! ..taste of summer!0
-
Beets, sweet potato, asparagus0

I love most Veggies.
It is hard to say what is my favorite. If pinned down, I'd have to say Broccoli. I'd also say Tomato, in all its forms, but since that is a fruit, not sure if it qualifies.
But what do I most frequently eat? That must be romaine lettuce for me, since I love salads.
Broccoli Rabe is another favorite of mine. And Zucchini.
Damn, can I just say nearly everything except beets?0 -
Cucumber, sliced and *lightly* salted.0
