we use almond mild, eggs, pumpkin puree and truvia. very low carb, low cal and it tastes great. I just have to figure out how to make a pie crust our of whipped cauliflower. they say it can be done.

Wow, this looks delicious. Sadly I'm a bit lactose intolerant.
So, this leads me a question. Is the cheese absolutely necessary or can I go without it? Will it impact the ending result a bit, or is it an ingredient that you can go without?

is pumpkin puree stuff you buy in a can? never seen it here in Aus, and I prefer the fresh stuff anyway! May try this with fresh pumpkin which I steam/boil and puree :)

    Awesome-but wait!! I don't have a microwave-how would I cook it in the oven?
It is 2013... buy a damn microwave

Yummy! Don't feel bad I don't have one either! I think I have all the ingredients, may have to experiment tomorrow.

Pumpkin purée is just canned pumpkin. If you haven't done the fresh pumpkin, I think it's kind of a pain. But if you don't mind it, more power to you
