What's 'French' food for you?

Ok, totally curious. I grew up in France and I'm not exactly sure what I consider 'French' food. There are quite a few regional dishes that are pretty different from each other.

The cultural food thread made me wonder though... what does everyone consider French food?

    Creamy sauces, cheeses, butter butter beurre, lovely vegetables like asparagus, beefs with lovely sauces, small meals exploding with flavor.

    That would be my guess.

    really fresh salads and vegetables, le fromage, le pain, lots of meat (charcuterie), of course les patisseries, pure delicious butter, good strong coffee (le cafe creme!) and regional dishes like bouillabaisse, um and maybe fondue although perhaps that is technically more Swiss or Belgian?

    Actually, I remember eating really good Indian food in France!

    I always break it up in my head. Southern France: herbes de provence, fresh vegetables, olives, seafood, bouillabaisse. Northern France: cream sauces, heavy stews, cheeses.

    Then there are the classic foods: croque madame/monsieur, croissants, crepes, frites, escargot, boeuf bourguignon, coq au vin, vol au vent... I could go on.

    Oh, and the desserts: macaron, eclair, dacquoise, genoise...

    Cassoulet (I don't like it by the way)
    Boeuf bourguignon
    Pâtisserie (Paris-Brest, éclairs, bavarois, millefeuille...)
    Croissants

    There are so many regional cuisines that it is hard to pick a single dish.

    Pure beautiful local seasonal ingredients prepared and presented perfectly. The ingredients and preparation depend on where you are and when you are there.

    Sort of like what is barbeque? (I believe NC Piedmont topped with slaw)
