Crash Hot Sweet Potatoes! I got the recipe off of Pinterest and tried them out last week. Sweet and spicy. A little more time consuming to make, and I suggest slicing the potatoes pretty thin. But man, they are good! Here's a link to the recipe:

I bake them with apples: Microwave a couple of whole sweet potatoes (prick few times with fork, first) until slightly soft. Cool in bowl of water. Peel skins off. Cut into large chunks. Layer into a deep baking dish with a couple of peeled, cored, chopped apples. Sprinkle all with a little cinnamon, ginger, nutmeg to taste. Can add in a few whole pitted prunes (I love them), or raisins, or dried apricots, or chopped dates, whatever you fancy. Pour about 1/4 cup of apple or orange juice over all. Cover and bake at 350 about 30-40 minutes so potatoes are completely cooked and apples are softened. Can sprinkle top with some chopped walnuts or pecans before serving.0

Sweet and Spicy and Easy Skillet Meal- Trader Joe Soy Chorizo with sweet potatoes, onion and cauliflower in one big skillet:
1)Saute in large skillet or wok coated with a cooking spray (or canola oil) one onion with one diced sweet potato until mostly softened
2)Add in cauliflower (or Broccoli or eggplant) cut into small pieces. Cook/stir fry until all vegetables are to softness you like.
You can salt and spice this mixture if you want (I like paprika cumin and organo)
3) add in one package of Trader Joe (or other brand) Soy Chorizo (or meat chorizo) and mix in until warm (if using meat, then cook to safe temp)
Serve with greek yogurt in place of sour cream if you want. This will make 5-6 servings depending on how hungry you are and how many vegetables you add. Yes, sweet potato does have carbs, but adding in a low-glycemic index vegetable such as cauliflower or broccoli helps. My husband really enjoys this and I find the macros fit with my goals.
I love sweet potatoes and also eat them roasted with old bay seasoning.0 -
The less stuff you put in it the healthier it will be... but I wrap mine in tin foil, place on a baking sheet and bake in the oven at 400 degrees for about an hour and a half and they end up caramelizing... they turn out SUPER SUPER sweet (no need to add brown sugar or anything to it)... it tastes amazing just like that without adding anything to it! I usually bake a few at a time and save the others for later. Delish!0
