    I made a Weight Watcher's recipe of General tso's Chicken, it is awesome and only 204 calories. I don't follow WW, but I still use some of their recipes.

    Oh, and I have some calories to spare, so I'm having sweet tea with my dinner instead of water.

    Mexican Baked Eggs

    Basically simmered canned tomatoes, black beans, diced green chilis, onion, and spices. Crack a few eggs on top and bake. Add a sprinkle of cheese and bake a few minutes more.

    220 calories per serving

    It's a great meal to have in your arsenal because it's low-cal, plus I personally usually have the ingredients on hand.

    This sounds wonderful!! I will definitely be trying that. I have all those ingredients right now too!!

    Greek salad with cucumbers, feta cheese, kalamata olives, tomato and pepperocinis. Also going to doctor up a thin crust frozen pizza with onions and mushrooms and have a slice or two.

    sorry to do this but.....I just went out and had a fantastic curry. Lamb rezala and garlic naan. I hadn't eaten since breakfast and had put in a two and a half hour walk in between. Worth it though.... nom nom......

    I was bad. Thai eggplant with veggies in red curry sauce, brown rice, and 2.5 steamed dumplings. Glad I worked out today so I'm still under 75 calories on a 1200 calorie day.
  • Boneless chicken thigh - pan seared with thyme and a touch of olive oil,
    Spaghetti squash with basil and sauteed onions,
    Turnip greens with mushrooms and hot chiles,
    Some wheat pasta, 6 seedless grapes and 3 roasted garlic triscuits.

    Oh yeah...and about 2oz of wafer thin London broil...I'm over my protein for the day, but I was cooking it for next week...quality control and all that.

    Tonight we're just having (slightly boring, but very tasty!) baked chicken thighs, with sides of either steamed snow peas (for me) and/or brown rice for boys in the house.

    my dinners are usually a by-product of dinner the day before....

    no one will want leftover chicken, but everyone will love home made chicken soup with home made corn bread....

    Dinner on a budget, mom's diet isn't shot to hell and the family is full & happy... a win-win-win!!
