    I use the high fiber, whole wheat tortillas (I think by La Tortilla Factory?)--the small size tortilla is only 50 calories, so with the pork & cabbage it is only around 200-250 calories depending on how full you stuff the wrap. Served w/a side of veggies & apples.

    Saturday I made Cauliflower Pizza and it was yummy. There was alot of Cauliflower "rice" left over so I am using it to reinvent my macoroni and cheese. I make a custard base not white sauce based mac & cheese so this will sort of be a cheesey "rice" with spinach. I will be using part skim mozzarella and low fat milk. My son is pescatarian so we do alot of vegetarian dinners.
