    Has anyone else made these? Just wondering how they turned out for you?

    They did not rise properly. They were very dense and no flavor. I am going to try to toast one today and maybe spread it with a little Smuckers low sugar jelly.

    After you make them let me know how it worked out for you.

    when i put it into the recipe calculator to put in my food diary, it said that the total calories for the recipe were 410, but you said it was 560...?

    It's probably a difference in the size of banana and the type of flour you used.

    i'm no chef, and have only come across plain, self raising and strong (for bread making) any body give me a clue?

    You can use all purpose flour in place of pastry flour. Pastry flour is the best type of wheat flour I have found however, because normal wheat flour always weighs down my recipes and makes them very dense. That might be some others problems.

    Plus remember that these are not going to be perfect replacements for high fat, high sugar muffins. It is just something to hold me over until lent and I can have sugar again :smile:

    Mine just came out of the oven. I added 2 tsp of sugar substitute and they have come out really well. Just sweet enough. Yum yum. Thanks for this great recipe

    Sure! I'm glad you liked them.

    I will probably add some honey or fructose to mine when lent is over too.
