I made coconut tomato curry with kabocha squash, Japanese sweet potato, carrots, onion, and garbanzo beans. Some tiny braised fishes on top!

Omg this is so yumm! Ripe yellow plantains pan fry in coconut oil, eaten with avocado and cherry tomatoes and a fried egg on top. My new favorite...!
