    Ham and Noodle Casserole

    6 oz uncooked yolk free fine noodles
    1-1/2 cups 1% cottage cheese small curd
    1 package frozen mix veggies (10oz)
    1 cup cubed ham
    3/4 cup reduced fat sour cream
    1/4 cup fat free milk
    3 tbsp grated parm
    2 tsp all purp flour
    1 tsp dill
    1/4 tsp salt

    cook noodles, drain. combined all ingredients and transfer to a 2 qt baking dish coated with cooking spray. bake at 350 for 30 min covered. uncover and bake 5-10 min longer

    1-1/2 cups equals 266 calories, 5 g fat(3 sat), 702 mg sodium, 3 g fiber, 21 g protein, 32 g carbs

    Special Cauliflower

    2 cups fresh cauliflowerets
    1 tbsp plain yogurt
    1 tbsp mayo
    1/2 tsp dijon mustard
    1/8 tsp dill weed
    1/8 tsp salt
    1/8 tsp garlic powder
    1/4 cup cheddar cheese

    steam cauliflower for 6-8 min. combined yogurt, mayo, mustard, dill, salt, garlic. Transfer cauliflower to an ungreased 3 cup baking dish and top with yogurt mixture. bake uncovered at 350 for 5 minutes or until heated through and cheese is melted

    3 servings

    2/3 cup equals 88 calories, 7 g fat, 4 g carbs, 4 g protein, 2 g fiber

    Marshmallow fudge

    1-1/3 cups semisweet chocolate chips
    2/3 cups fat free sweetened condensed milk
    1 tsp vanilla extract
    1-1/3 cup mini marshmallows
    2 whole reduced fat graham crackers broken into bite size pieces

    line an 8 in square pan with foil and coat with cooking spray, set aside. in a heavy saucepan over low heat melt the choco chips with milk, stir until smooth. stir in vanilla. fold in the marshmallows and graham crackers. pour into prepared pan and refrigerate for 1 hour or until firm. cut into 48 pieces

    1 piece equals 41 calories, 1 g fat, 10 mg sodium, 7 g carbs, 1 g protein

    Spaghetti Pie:

    1 lb lean ground beef
    4 1/2 cups spaghetti sauce of your choice ( I used the Homemade Gourmet Homestyle Spaghetti Sauce)
    1 block fat free cream cheese - softened
    16 oz low fat cottage cheese
    1/2 cup fat free sour cream
    8 oz pasta (I was going to make 12 oz of pasta but only had 8 oz of angel hair pasta on hand and it turned out to be enough).


    Heat oven to 350. Boil the pasta. Brown beef and drain. Add spaghetti sauce to meat and warm it up on low heat. Meanwhile, mix together cream cheese, cottage cheese and sour cream and set aside. Once pasta is done, drain it and put half of the pasta in a 13x9 baking dish, spread all the cheese mixture on top. Put rest of pasta over the cheese mixture. Pour the spaghetti/meat sauce over the top (be careful that it doesn't overflow!). Bake for 45-50 minutes.

    I considered 1/8 of the baking dish to be a serving size and it covers almost the entire plate! Yummy and satisfying!

    1 c celery, diced
    2 zucchini, diced
    1 bell pepper, diced
    1 t dried basil
    1 t dried thyme



    Directions
    Place all ingredients in a slow cooker. Set on low heat. Cook for 6-7 hours. Before serving, shred meat with a fork.
    Makes 8 heaping one cup servings.

    this was dinner tonight, and it was really tasty!

    Garlic Lime Pork Chop

    4 (4-6 oz) lean boneless pork chops
    4 cloves garlic, crushed
    1 tsp cumin
    1 tsp chili powder
    1 tsp paprika
    1/2 lime, juice of
    lime zest
    salt and fresh pepper
    Trim any fat off pork. In a large bowl season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 20 minutes.
    Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned

    Cilantro Lime Rice

    1 cup extra long grain rice or basmati rice
    1/2 lime, juice of
    2 cups water
    1 tsp salt
    3 tbsp fresh chopped cilantro
    3 tsp vegetable oil

    In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.

    In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.


    My family needed 1.5 cps of rice to eat, so adjust for size. We had it with a side of steamed snap peas. Delish!. My diary says that my calorie total was about 500 calories.

    Artichoke feta quiche:

    3 xlarge eggs
    1 cup 2% milk
    1/2 can artichoke hearts drained and chopped
    1/4 cup feta
    2 tbsp sundried tomatoes
    2 links cooked turkey or chicken sausage
    3/4 tsp salt
    pepper to taste
    1 frozen pie crust (omit if you wish and grease the pan heavily)

    preheat to 350. Whisk eggs, stir in milk, artichokes, feta, tomatoes, sausage, salt, pepper. pour into crust. baked for 45 min or until eggs are set.

    makes 6 servings: 250 cal, 14 g fat(5g sat), 890 mg sodium.

    This is great to grab a slice for breakfast
