What are your favorite crock pot recipes? The healthier and the cheaper the better!!

    On Saturday I made black eyed peas that I soaked over night. I added boxed vegetable broth (but it is not necessary), ¾ of a sautéed onion, and ⅓ of head of garlic. I peeled and cut the garlic and dumped it into beans without sautéing because I wanted to keep things as easy a possible.

    Chicken with bell pepper, lime juice, cilantro, and onion for tacos. Chicken and buffalo sauce for sandwiches, pinto beans cooked down, drained, and smashed for bean burritos.

    This recipe makes a lot of soup. I freeze single portions.

    Mexican Crockpot Soup

    Ingredients:
    1 Tbsp olive oil
    2 lbs boneless chicken breasts (I used three)
    1 ½ cups chopped red onion
    1 ¼ cups chopped red bell pepper
    2 cups chicken broth
    ¼ cup chopped cilantro
    1 Tbsp Cumin
    2 Tbsp chopped chipotle chile in adobo
    6 cloves of garlic, roughly chopped
    2 (28oz) fire roasted tomatoes
    1 (4 oz) chopped green chiles, undrained
    Salt and pepper

    Instructions
    Heat a large skillet and brown the chicken in the olive oil.
    Add everything except the cilantro in the crockpot and stir it up
    Cook on low for 6-7 hours
    I add zucchini a bunch of chopped zucchini when there’s about an hour left of cooking.

    I wonder if it would taste good without the chicken, I'm trying to find some recipes without meat in order to save money. I'm excited to try this because I've always wanted to play around with Quinoa.
