What are your favorite crock pot recipes? The healthier and the cheaper the better!!

On Saturday I made black eyed peas that I soaked over night. I added boxed vegetable broth (but it is not necessary), ¾ of a sautéed onion, and ⅓ of head of garlic. I peeled and cut the garlic and dumped it into beans without sautéing because I wanted to keep things as easy a possible.0

Chicken with bell pepper, lime juice, cilantro, and onion for tacos. Chicken and buffalo sauce for sandwiches, pinto beans cooked down, drained, and smashed for bean burritos.0

This recipe makes a lot of soup. I freeze single portions.
Mexican Crockpot Soup
Ingredients:
1 Tbsp olive oil
2 lbs boneless chicken breasts (I used three)
1 ½ cups chopped red onion
1 ¼ cups chopped red bell pepper
2 cups chicken broth
¼ cup chopped cilantro
1 Tbsp Cumin
2 Tbsp chopped chipotle chile in adobo
6 cloves of garlic, roughly chopped
2 (28oz) fire roasted tomatoes
1 (4 oz) chopped green chiles, undrained
Salt and pepper
Instructions
Heat a large skillet and brown the chicken in the olive oil.
Add everything except the cilantro in the crockpot and stir it up
Cook on low for 6-7 hours
I add zucchini a bunch of chopped zucchini when there’s about an hour left of cooking.
