    If you have 500 calories left over (give or take) then why no just eat a real meal for dinner? You can get a protein, veg and carb meal in for that amount.
    I get home late so I don't want a heavy meal that late

    Why is that? Does it affect your sleep?

    3 pounds overnight or 3 pounds this week?

    If it's this week, you might want to up that calorie goal because that's pretty fast.

    If it's overnight, it's normal fluctuation.

    It's mostly water weight. Also if you wind up having 500 cals left at night, either eat it all or eat them the next day on top of your normal intake. Just make sure you have a sustainable, 1lb/week goal while eating as much food as possible to miminize muscle loss and ensure you can actually stay consistent with your intake and not wind up derailing.
