I love eating it chopped up with some tomato and cucumbers and squeeze a lime all over that and sprinkle some salt. Delicious salad. :) You can add some cilantro as well if you'd like.

Steam it and have it with a lentil burger, carrots, peas and mash potatoes.

I add a cup or so to my regular daily salad w. dressing. I add a little extra lemon, balsamic or even salsa to add moisture.

Cook it up with water and vinegar for a quick sauerkraut. There are endless variations on coleslaw - either creamy or not.

It's good boiled. (Wow, I sound like an old lady or something.) But really, with salt and pepper. Also if you throw a few bay leaves into the water while it's cooking. Or you can chop it up and put it in salad, but that's usually what purple cabbage is used for. Still good, though :3

Make an Asian coleslaw with a dressing made of ginger, soy sauce, sesame oil, rice vinegar and spicy red chili flakes.

On it's own, I cook it with onion and caraway seeds (or Mrs. Dash or your favorite spice) and it's sooo good. Or, chop and freeze it and toss it in the next stir fry you make. It's also good diced in a green salad. Or, toss it in the slow cooker with some beef, carrots, onion and potatoes with a little broth and red wine and it'll be super tender and delicious.
