This is one of my favorite recipes. It won first runner-up in a Splenda recipe contest on Bariatriceating.com and is featured in one of Susan Maria Leach's cookbooks. These are blueberry popovers and the recipe can be found on Bariatriceating.com.
The second picture is the one of the meals I make with the popovers. Popovers, green chili egg puff, and homemade turkey sausage.

This is one of my favorite lunches. I use a hollowed out cucumber and fill with all kinds of goodies...fresh spinach, lean deli meat, light cream cheese with chopped veggies mixed in. And of course a side of mango and avocado slices. Better than any burger and fries and so much healthier.

How do you do the cucumbers? I tried once, but the fillings kept slipping and it ended up being a huge mess.0

White corn tortillas
Moroccan spice flavored Jennie-o ground turkey
Fresh parsley
Greek yogurt dill blend
Romaine lettuce
Greek olives
Fried in olive oil
Because sometimes I need fried food but I want to do it healthier. They don't need fried and you can spice them any way you choose. These were so tasty! This was a mid afternoon snack. I was soooo hungry. Hit the spot though.

I loved the way this salmon turned out the other night! I rinsed and dried it. Lightly coated it with whole wheat flour, drizzled a little honey on top then topped with dill. I pan seared it in olive oil then finished by baking it on 350 for 8-10 minutes. The sweetness with the salmon is so good. I always want to eat a second one. But I dig into my veggies instead

Pan seared tofu with wasabi mayo and sides of cooked sesame spinach salad topped with feta and garlic asparagus:
Pan seared salmon rubbed with garlic, chilli, and cinnamon, topped with coconut chili mango sauce and toasted shredded coconut with some chopped cashews, on sweet and spicy chilli coconut cashew rice:

Those popovers look DELICIOUS! I don't do artificial sweetener or white bleached flour. Do you think it would be ok to substitute the splenda for sugar in the raw? Do you know what ratio would be best? I would also want to use whole wheat flour. Opinion?0 -

Not the poster, but generally in baking I would substitute 2 things maximum. If you can, sub half whole wheat and half white, otherwise you may be looking at a much denser popover that might not really 'pop'. You can sub Sugar In The Raw for Splenda, I believe there are conversion charts out there?
When in doubt...just try it and see how it turns out!

Friday - Beef teryiaki with rice and veggies on a bed of spinach and strawberries.
Saturday - Went to the Spaghetti Factory. Chicken Marsala, spaghetti with brown butter sauce and mitzra cheese, green salad with a little pesto ranch dressing.
Sunday - A mess on a plate, but yummy. Turkey sandwich with tomato, onion, mushroom, mixed greens, mixed sprouts, cheddar jack cheese, mayo and mustard; raw asparagus, coleslaw, cucumber, and red grapes.
