My partner learned to make gallo pinto once we got back and this was lunch today - with fried eggs and sautéed Kimchi. Could eat this every day.

Gallo Pinto!! :) Try it adding onion and sweet peppers also dressings it with some "Salsa inglesa" or sour cream and add some fried sweet plantains, a corn tortilla , some eggs & piece of cheese to your plate and there you have a typical costa rican breakfast! ;)
LOL! we use onion, sweet peppers, lizano, and normally a tortilla but that's a bit much for a standard breakfast here....this is our homemade version of "los typicos"

Here it is again with a salad on the side for lunch. Made a fresh batch again this morning and it turned out even better...

This is my weekday morning meal. I make about 12 at a time and freeze individually to make my mornings easy.

Eggbeaters, spinach, and onion on a whole wheat muffin.

I bottled my limoncello tonight. There is so much of it that I don't even know what to do with it all. I don't even like to drink alcohol very much, but I wanted to try and make it anyway. It's so lemony and sweet (and stroooong!)

Not sure how to do this, but I'll try it out.

Garlic and herb crusted tilapia, roasted veggies and Spanish rice.
