Homemade tabouli stuffed red pepper

sooo good!!!
I made the tabouli myself with one bunch of parsley 6 green onions 2 gloves of garlic half a cucumber one pint of grape tomatoes and a tbl spoon of extra virgin olive oil, this was amazing to do cause I could add as much of whatever I wanted to make the tabouli customer to my taste I also cut the end off a lemon squeezed the juice and left the peel in my mix. It would be tasty with pine nuts too but I didn't pick any up nor did j have burglar.
Browned the extra lean ground beef and hollowed out a red pepper (like carving a pumpkin kind of) I did mine in layers a scoop of tabouli and a scoop of ground beef until it was full. Sprinkled some feta cheese put the top back on the pepper and baked for 30 minutes at 275.
My pepper was a little undercooked but I liked the crunch.
This meal had 357 calories. The tabouli actually made about 3 or 4 cups of and left in the fridge. I added the ground beef once it was cooled and mixed it. I have 3 more bell peppers and easy dinner/lunches for some of the week

Delicious but without the cracked wheat in it you can't call it tabouli. It'd eat it though for sure and thank you for sharing.0
