    Day 1 of project 'Eat down Pantry/Freezer with no grocery shopping'.

    It looks a hot mess but daaammmnnnnnnn, it's good!

    Turtle beans (soaked overnight) cooked for 12 hours in the crockpot with onion, garlic, beef broth, and bay leaf. I added frozen corn for the last hour and served it over homemade corn bread. Topped it with a bit of leftover frozen cheese and a dollop of Daisy Sour Cream. This was too good to even believe!

    Tuxedo mousse cheesecake, cream puffs (chocolate praline, s'more, passionfruit coconut, pear ginger) and After Eight milkshake. The milkshake sat for a bit before I drank it, hence the layered appearance. So delicious, though!

    Side note. I really wish I could take better pictures. Lighting in my apartment is terrible and sometimes I don't even realize how blurry these are for all the rush I'm in to eat it lol

    pksd: Happy to share the process! The tofu I just seasoned with grill seasoning and panfried, the veggies got chopped and sauteed with salt, pepper, olive oil, and lemon juice. The romesco sauce is basically the one found here, but because of what I had on-hand I subbed two roasted red peppers for two of the tomatoes, did more almonds in place of the hazelnuts, subbed some chipotle for the dried ancho chile, and left out the extra 1/3 cup of olive oil because it just didn't need it to be a good sauce. Great flavor, many fewer calories, suited my desires, would be positively luscious with the addition I'm sure.
