I dont have ideas for fresh, but I slice and mix with olive oil and roast until tender, it is excellent that way.0

I just found a recipe for Shrimp Saganaki on eatingwell.com. It was so easy and tasted AMAZING!!!0

Dead easy!
Cut it in half season with olive oil, little salt and pepper and then you can griddle it till it chars. Serve it as a side dish, nice next to fish!
Alternatively it makes a nice salad. Cut it down to thin strips like you would cabbage in coleslaw, cut some orange segments up (remove all the bits from the orange) and then dress with olive oil and whatever you like in your dressing. Use the dark green bits off the tops of the fennel in your salad too.
It a great veg, very under used!0
