It can vary depending on what ingredients you decide to use. But here they are based on how I prepared it.

Hello, Colby cheese is a mix of Monterey jack cheese and cheddar cheese. But you can use any cheese you like :)

I bet Pepper Jack would be amazing in this. I am going to try with Turkey Sausage crumbles or some Soy Chroizo.

Oh to make this fit into a low carb diet, you'd use real full fat cream cheese and cheese along with the whole eggs, but it looks very good! Hubby is our breakfast maker so I am going to ask him to make this.

    Thank you!

I made this tonight and used ground breakfast turkey sausage, a can of chopped mushrooms, and used fresh cauliflower that I cooked stove top in a cast iron skillet until brown and sof. It was really good. The cauliflower remind me of a tater tot.

Sounds like a great dinner entree.Maybe with green salad or veggie tray.
  • I think im going to try this minus the sausage since I don't eat meat. Going to use the ground soy crumbles instead and use it for my meal prep!! Thanks
