    I think a fresher La Tur is delicious, but after about 2-3 days it becomes too sharp for me. I am a huge fan of d'affinois, st. andre, and then a good butterkase.

    If we're going basic, I've never met a swiss that I didn't like.

    I am also a fan of Sharp cheeses, specifically sharp provolone.

    I enjoy some plain ol' pepper jack and fresh mozzarella.

    I've never really tried anything more upscale though, there is a place called Houston Dairymaids I want to try.

    I couldn't possibly pick just one. It depends on my mood. Goat cheese, soft cheese, semi-soft cheese, hard cheese, aged cheese, blooming rind, washed rind, raw milk, creamy, crumbly, blue...

    Basically anything but processed plastic cheese, like Kraft singles, which ew, gross. That is not cheese.

    Also, sorry, Brits, but I'm not a fan of stilton. To me it tastes like feet. Your mileage may vary.

    As a Wiscosinite, those cheese curds are a bit overdone. All they need is a nice beer batter and hot oil:

    Oh I love stilton. And a good gorgonzola... just not the 'piquante' type.

    I am a cheesemaker! I have a cheddar aging right now from a cheesemaking kit I was given. No idea what it will be like, but I like the idea of it. It was a major hassle to make, so I hope it's worth it.
