This is what I just had for lunch. Spinach and caper omelet. I am really bad at making omelets that don't fall apart but it filled me up!! I like using capers or olives for flavour - I know it's very salty but if something tastes rich I'm more likely to eat less.0 -
Last night's TANDOORI, baby, and it was DELICIOUS! I did a whole 4-lb chicken, skinned. This recipe calls for a marinade that includes yogurt and butter, and I used Greek 0% yogurt and Light (50% fat) butter.
It's difficult to pinpoint the calories because so much of the marinade ends up being discarded, but by my calculations, this ended up at about 350 calories for two thighs. With roasted cauliflower and a little bit of naan bread, my dinner was 500-550 calories. That's high for me, but I had skimped a bit at lunch.
The marinade, for a 4-lb chicken, skinned:
1 C. 0% Greek yogurt mixed with one large smashed/diced garlic clove
4 oz. Land O'Lakes Light butter, just barrely melted and cooled a bit
1/2 Cup Desi Tandoori Masala spice blend
A large handful of coriander leaves, chopped fine (about a cup)
Blend and marinate the chicken for about 4 or more hours, and grill. Garnish with sliced onions and lemon wedges.

After that epic "Pizza is fast food" thread, dinner on Thursday was a feta and bbq chicken "pizza" on a GF tortilla, smothered in sriracha.
Veggies with hummus and balsamic glaze for lunch on Friday!
THEN had real pizza Friday night, since Thursday's "pizza" didn't cut it!
And lunch yesterday was chicken and feta salad with mango salsa.

St. Paddy's Day potluck at work. I made sure to eat a light breakfast and don't plan on eating much tonight, obviously! Corned beef and cabbage (OMG good!); roasted asparagus; green beans; spicy roasted pea pods; deviled eggs (my contribution); spinach & strawberry salad; broccoli salad; boiled carrots & potatoes; potato cake; ravioli shaped like shamrocks; garlic cheese bread (they had about 4 different kinds of bread and I limited myself to just one, ha!); cookies; cupcakes; apple cake (another one of my contributions). Lots of yummy veggie options for a change!0

I decided I wasn't going to eat that whole dessert plate, so I flipped a coin. Cookies heads, cupcake tails. I had to flip that darn coin three times before the cupcake one! Taking the cookies home to Dad!
