Cauliflower Breakfast Bake Low Carb

A great breakfast if you're looking for meal prep it'll last you the whole week!
Cauliflower Breakfast Bake
1 pound sausage
4 ounces block Light cream cheese
4 ounces cubed reduced Colby cheese
5 egg or cup egg whites
1 teaspoon minced garlic
1/2 pound frozen cauliflower
4 ounces mushrooms
Garlic Salt, pepper, and Cajun seasoning
Brown sausage in skillet and sauté mushrooms add your minced garlic, drain when done. Boil cauliflower in a pot of water. Cut your cream cheese into cubes, mix your eggs with seasoning. Spray your baking pan with cooking spray. Put your sausage and cauliflower mixture in the pan, pour eggs overtop of mixture. Top with cheese and cream cheese. Bake or 350° for 30 minutes or until browned.
You can make any variations you like

Hello, Colby cheese is a mix of Monterey jack cheese and cheddar cheese. But you can use any cheese you like

I bet Pepper Jack would be amazing in this. I am going to try with Turkey Sausage crumbles or some Soy Chroizo.0 -
Oh to make this fit into a low carb diet, you'd use real full fat cream cheese and cheese along with the whole eggs, but it looks very good! Hubby is our breakfast maker so I am going to ask him to make this.

I made this tonight and used ground breakfast turkey sausage, a can of chopped mushrooms, and used fresh cauliflower that I cooked stove top in a cast iron skillet until brown and sof. It was really good. The cauliflower remind me of a tater tot.0

What is a serving size? 1/2cup or 1 cup?0

I think im going to try this minus the sausage since I don't eat meat. Going to use the ground soy crumbles instead and use it for my meal prep!! Thanks0
