    Tonight I'm making chicken breast with bbq sauce on them on the grill. I'm doing fresh corn and grilled zucchini with it. Then tomorrow with the leftover bbq chicken breast we are doing BBQ chicken pizza (minus the cheese for mine since I can't eat dairy) with red onion, cilantro, pineapple, and turkey bacon on it. So there are two ideas for you! :)

    I have chicken with BBQ sauce in the crockpot, will probably have cooked carrots, and broccoli with it. Maybe a roll....its an easy go to for me!!

    I am making weight watchers faux-fried chicken, with smashed potatoes and cauliflower and roasted brussel sprouts.

    Tonight is going to be a white chili made with ground turkey and cannellini beans. Last night was a zucchini, mushroom, and onion stir-fry with some citrus-marinated shrimp served with brown rice.

    i made fragrant lamb flatbreads with a salad of lettuce and tomatoes. only about 380 calories and very tasty

    Tonight I'm trying the stuffed pepper casserole someone posted last Friday (title was something like yummy dinner idea).

    Tweaking it a bit though, as I usually do. Using lean ground beef, three peppers, prego sauce (since there's some in the fridge that needs to be used up) and a combination of white and brown rice (hubby's not a fan of brown but I'm hoping a mix will go over ok). Also adding some onion and at least doubling the cheese. The calories per serving definitely increased with these changes but it's still under 400 per serving which is fantastic in my world! :)

    No time for more grocery shopping tonight so I'm making something with what I have, Bruschetta Chicken Bake but NO cheese (we are cheese-haters) and I'm going to add in some baby spinach that I'm going to wilt on the stove first so that mixing everything together is much easier. 4 cups of spinach ends up looking like 1/2 cup cooked.

    Only downside is due to the stuffing I’m now at 2750 mg sodium for the day so I must step up the water. At 7+ glasses now at 2:45pm so it's not a problem.

    I am just like you and eat chicken all the time so tonight I am making lean ground turkey stuffed bell peppers. Still very healthy and easy. Hope this helps you out

    Cold and rainy here. Making white bean and sausage soup with kale. Will serve with an arugula salad and a slice of hearty bread.

    I am not sure about tonight, but I have been eating steamed veggies with tofu over brown rice. Boring, but can be great if you add a little bit of the right sauce. And it is very filling!

    Tonight is taco meatloaf (low sodium taco seasoning, lean hamburger, crushed cheese crackers, salsa and fat free cheese slices) with mashed potatoes and green beans.
  • I try to avoid eating carbs in the evening as I find they really slow down my weight loss. Therefore the best meals for me are protein and veg- but I have definately found butternut squash a life saviour, as they are even nicer than potatoes when roasted and no where near the carb content. Squash really is my top tip!

    I often get chicken breasts to roast but they can be a little plain on their own, I cut a slice down the middle and spread on some very low fat soft cheese (philadelphia light is good) and then wrap in panchetta. The panchetta is the only bad thing really, and then eating it with some roasted butternut squash and salad is just lovely, it looks very colourful and feels luxurious.

    Also Birds eye roast in the oven from frozen chicken and fish is also very good and low calorie (Iceland do their own versions which are also ok), add mediterean veg and you're away. I hope this helps!

    looks like I've settled on a make shift stuffed cabbage....boiling the cabbage, have venison that I will brown with onion, wild rice, some turkey bacon then marinara on top.
