Tofu scramble with half an english muffin topped with basil paste and some cheese. The tofu I bought is labelled "great for stir fry" but it is anything but! It became a scrambly mess when I tried to fry it last night for dinner so I figured I'd try another tactic today for lunch

Everything looks SO amazing in this thread. I'll have to recreate some of these ❤️
This was my lunch today - chicken, onion, mushroom, red, orange, and green pepper, zucchini, garlic, and reduced sodium soy sauce over freshly made quinoa and some sautéed spinach on the side.
This is one of my favorite go-to meals for under 300 calories.
