Yummy breakfast or lunch idea

I just made a delicious sandwich at work for lunch. I made egg whites in the microwave (just pour some on to a plate with a lip, and microwave for a minute or so), added a slice of cheese, a dab of sriracha, a big handful of arugula and put that on a whole wheat english muffin. You could do open face if you like to have more protein to carbs. Delicious and pretty low in calories (230 with the whole english muffin).

    If you used a light English muffin and 2% cheese, I calculate that at 188 calories!

    True! But then it wouldn't be as filling, and I would be hungry sooner. I find it hard to balance "light" with satiating sometimes....

    Ahh, I don't notice a difference with the English muffins - gotcha!

    Light anything never fills me up.
