I'm In A Salad Rut, What Do You Put In Yours?

I love mixed roasted veggies, cold or warm over my salads. I'm making a salad tonight of only leftover shredded chicken, thinly sliced fennel bulb & thinly sliced green apple with a walnut/mustard viniagrette and toasted almond slices. Fantastic & the fennel isn't nearly as strong as you'd think when you are slicing it, good crunch.0

Today my salad consists of romaine, cucumbers, tomatos, broccoli, feta, some bacon bits and a few croutons, lite balsamic dressing.0

1 - Strawberries, chicken, feta and red onions
2 - Chicken or Ground Turkey, corn, black beans, salsa
I have other varieties but these are my most creative.0 -
My two favorite salads are either one with goat cheese, craisins, pecans, and sauteed onions, OR one with kalamata olives, feta cheese, chopped red onion, tomato and cucumber.0

My current favorite is Kale with chickpeas, chicken, a fruit (strawberry, blueberry, pear) and then a lemon vinaigrette!!0

i put pinto beans and salsa in my salads. Its like a giant bowl of burrito flavor!0

I add a variety at times:
Turkey or chicken
Sunflower seeds
Radishes
Cherry Tomatoes
Onion/Green Onion/Purple Onion
Bell Pepper
Boiled Egg
Black Beans
Salsa/instead of dressing sometimes
Ken's Raspberry Vinaigrette
Cucumbers
Zucchini
Strawberries

These days, I'm liking cous cous flavoured with vegetable stock, then I have spinach, carrots, onions, sweetcorn and peppers and jalapenos for some kick, all mixed in with some salad. Best thing, tastes great either hot or cold!0

These all sound delicious and to the pumpkin folks I say thank you because that is something I never would have thought to add but will definitely try.
My personal favorites are taco salad which I kind of go crazy with, anything you'd find on a mexican buffet could be in it.
The other favorite is cheeseburger salad, ground meat, cheese, bacon bits, diced pickles, french fried onions, ketchup and mustard as dressing and whatever you traditionally put in your salad.
Pecans, cranberries or dried blueberries, turkey, goat cheese mixed with fresh baby spinach is succulent especially if you toss in some fresh strawberries. I don't use many dressings but if you choose to the wine based vinegarettes are fabulous on this one.
Grilled chicken, mandarin oranges and walnuts are really good too as a topper to a nice spinach or mixed green salad. I tend to use the juice from the oranges as the dressing.0 -

Arugula
Peach
Roasted beet
Red onion (raw or pickled)
Chicken breast
Gorgonzola
Pecans
Balsamic vinaigrette
Lemon juice
Quinoa
Bacon
Pineapple (caramelized in bacon fat)
Red onion
Jalapeño
Goat cheese
Avocado
Cilantro
Lime juice
Add a generous dose of salt and pepper to both if you're into that sort of thing. Obviously that second one is great if you need to get your fats up. Yum!

Simple things make salad delicious like grapes.apples.pear.most fruits will compliment a salad and makes a change so u never get bored ☺0

My usual crunchy asian salad with chicken:
Shredded romaine lettuce
Shredded baby bok choy
Shredded red cabbage
Julienne carrots, bell pepper, cucumbers
Thinly sliced red onion
If available, fresh cilantro or thai basil
Chicken breast cooked, cubed
Sesame vinaigrette
Sriracha
My other usual tomato and corn salad with grilled chicken:
Halved cherry tomatoes
Fresh corn kernels (or thawed)
Baby aragula
Pieces of grilled asparagus or grilled green beans
Grilled chicken breast, cubed
Cubed avocado
Bacon, if wanted
Ranch vinaigrette (a mix of low fat sour cream and greek yogurt with red wine vinegar, oregano, thyme, garlic powder and a little bit of tabasco)
Today in my lunchbox:
Baby aragula and baby spinach
Shredded romaine lettuce
Pieces of grilled asparagus
Slivered red onions
Leftover cooked salmon
Leftover pasta and pesto
Just a little olive oil and lemon juice as a dressing0 -
