Today is a public holiday where I live and while I'm sure most people are using it as an excuse to sleep in, I used it as an opportunity to bake some egg muffins to be my breakfast for the week. I've been trying to eat more protein and less carbs for breakfast (I'm insulin resistant) which is difficult for me as I've always been a cereal kinda gal. Last week I was just making eggs in the microwave but even though I used a spray oil on the bowls, the egg still stuck and made a mess. I'd made egg muffins before and they also stuck to the paper liners so this time I tried 3 methods. The silicone liners were a clear winner but I only have 4 of them. Looks like I'll need to buy more!

Good to know. I made some once and it was a mess, now I just do it quiche style and cut slices, lol.

I use a silicone muffin pan for my scrambled egg muffins. Don't need to oil the pan, and they pop right out. I like to make up a bunch and then freeze them.

Overnight pressed sandwich: ciabatta roll, creamy tomato-basil-garlic hummus, salad greens, grilled zucchini and grilled eggplant, thin sliced pan fried tofu, with an apricot. Perfect for another hot afternoon, wish I had made a few more last night

So after looking at these photos, I've come to realize that its definitely about portion control for high caloric foods and the nutrient packed meals seem to overflow on plates. I can have the best of both worlds.
