    Here's my favorite... I got the idea from Men's Health but kinda customized it. I usually make these two at a time in the toaster oven, but there a only two in my household.

    2 boneless/skinless chicken breasts, butterflied
    Garlic salt or garlic powder
    Dried basil (or Italian seasoning)
    Low-fat mozzarella cheese (shredded or cut thin slices from the typical 12-oz block from the grocery store.)

    Once you've got the chicken butterflied, lay it "open" on your work surface, with what was the interior facing up towards you. Sprinkle the whole thing lightly with garlic salt or garlic powder, then the basil or Italian seasoning. (I am very liberal with the herbs... use as much as you like.)

    Place a little cheese on one side of the butterfly, then close it back up. You'll almost have a stuffed breast.

    I usually do a little more garlic salt on top, followed by more basil, to pretty things up. Bake in the oven for 15 to 20 minutes (until the juices run clear, yada yada yada).... And serve!

    This usually produces the most juicy chicken breast I've ever made, and the mozzarella and the basil go together so well. Plus the extra calcium and protein in the cheese can't hurt.

    I usually pair it with fresh green beans, cooked with chopped onion and a teeny bit of lemon juice with black pepper... Or if I'm feeling lazy, Uncle Ben"s garden vegetable ready rice.

    ohhhhhhh, here is the most easy and delic chicken recipe ever. Got it from a friend but modified it to be healthy.

    3-4 lbs chicken breast
    2 cans white beans drained and rinsed
    1pt cherry tomatoes
    1/4-1/5 cup white wine
    salt, pepper, and garlic, to your tasting.
    a few rosemary sprigs and a sprinkle of thyme (really I there isn't an amount, just go with what you like)


    Place beans in a glass baking dish, add chicken on top, add wine, tomatoes then spices and cook at 350 until juices run clear. I think it took about 30 min last time I made it. This is so great the next day too! <<drool>> It's a good base for adding other things too (like bell peppers if you like them).

    I never measure stuff but here goes:

    4 chicken breasts
    4 potatoes, cut in half
    1/2 bag of baby carrots
    BBQ sauce

    Season the chicken with pepper on one side, meat tenderizer on the other side. I line a baking dish with Reynolds wrap, throw everything in there, and bake in oven at 350 degrees for about 20 min. I mix about 1/2 bottle of BBQ sauce with water, enough to get my desired consistency, and pour it over everything, and bake again for another 20 min or until the chicken is completely cooked through.

    There are some great ideas - I'm going to try the med one!!

    Put a chicken breast on top of a piece of foil
    Place minced garlic, sliced cherry tomatoes, basil, a dash of balsamic vinegar and lots of black pepper on top.
    Bring the foil over it and make a loose packet then bake in the oven, I usually open the foil for the last few minutes.

    Sometimes I add black olives or dried chilli flakes too!

    Oh and another one is the same but place
    Coriander (cilantro???) crushed ginger, chilli flakes and a 2 slices of lemon and bake in the same way.

    I LOVE this one:

    2 HEB leg quarters, pre seasoned (these are my absolute FAV, but you can use non seasoned leg quarters and season how you'd like)
    Your fav BBQ sauce brushed on top.

    Bake for 45 mins - 1 hr @ 400 degrees, or until the chicken is ready. You can take it out every 20 mins to add some more BBQ on top. I LOVE this with a big side of green beans and some brown rice and a huge salad. Hmmm...I think I'll be making this tonight!

    I have one...but it's not for the oven, but the crock pot. Takes 5 minutes to prep and set it and forget it!


    Ingredients:

    Chicken Breasts - how many ever you want
    Jar of your favorite salsa (I experiment with different flavors)
    Jasmine Rice

    Put chicken breasts in crock pot...dump jar of salsa over. Cook in crock pot 4-6 hours on high or 6-8 hours on low.

    At meal time, prepare Jasmine rice as directed on package. Serve chicken over rice.

    This is awesome as leftovers as well. My family loves this dish...and I love that it literally takes me less than 5 minutes to prep.

    This sounds good. I make a similar recipe that I got off of Spark Recipes where you add a can of black beans and some frozen corn. I also add fresh cilantro and green onion at the end with a little light sour cream or laughing cow cheese. Yum!

    I make what I've named "Mediterannean Chicken"

    You can design this to fit whatever calorie count you want by dialing up and down on the amounts.

    In a big bowl combine:

    Grape tomatoes cut in half (or chopped bit tomatoes, fresh ones)
    Diced white meat chicken
    Crumbled feta cheese
    Walnuts
    Dried basil
    Olive oil
    Lime or lemon juice (a fair amount, not just a dash)

    Mix, mix, mix. Put into a baking dish and bake in oven at 350 degrees for about half an hour. I eat it on its own, but it could be a topper for spaghetti or rice.

    Oh yum yum! I am trying this!

    I eat this about 4 times a week...

    1 package Perdue Fit & Easy Chicken Breast Tenderloins
    3 tbsp Bertolli Extra Light Tasting Olive Oil
    Dash of Salt
    2 tbsp Mrs. Dash Table Blend Seasoning (use more or less to taste)
    2 tbsp Tone's Rosemary & Garlic Seasoning (use more or less to taste)

    Preheat oven to 375 degrees.
    Pour olive oil into the bottom of a 9x9 glass baking dish.
    Remove chicken from package and place in oil in pan, then flip to cover in oil.
    Sprinkle a dash of salt, then 1 tbsp Mrs. Dash, then 1 tbsp of the R&G seasoning all over the chicken.
    Flip chicken again and repeat seasoning method.
    Place in preheated oven for 40 minutes flipping chicken halfway.

    I eat mine with either instant mashed potatoes, a small can of lima beans, a mini corn on the cob, or a drained can of mandarin oranges on the side.

    Edit: The packages usually come with 7-8 tenders of chicken... I usually only eat about 4 of them. I've added the recipe nutrition content to the database here... search homemade - psw seasoned chicken tenders.

    Taco Chicken (packets) ..... look for Reynolds wrap recipes... super simple

    Boneless, skinless chicken breasts
    Taco seasoning mix (couple teaspoons)
    Salsa
    Cheddar cheese

    Layer ingredients on a piece of foil. Bring edges of foil together (form a tent) and seal together. Bake 30 min @ 400°

    Optional - top with sour cream

    Yum Yum this sounds really good! Definitely trying!

    hi i always heard that boneless skinsless chicken is really good and quick and easy in the oven i usually season it with a lil bit of adobo its like a spanish thing it only has like 20 calories and u can cook it for like 25 min and its really good with some veggies ..

    One of my favorite meals is lining a pan with tinfoil, place 2 boneless skinless chicken breasts on it then coat them with Tabasco (Personally I use a cayenne pepper sauce from Publix) then top with garlic powder, onion powder, black pepper and a tiny amount of salt. I bake it for 45 minutes at 400 degrees with 2 white potatoes. Super easy and very tasty!

    Easy Italian Bread Crumb Chicken

    2 servings 180 calories each

    2 chicken breasts
    ¼ cup Great value Italian bread crumbs
    Hot sauce (We use Cholula Chili Garlic)

    Coat chicken breast with hot sauce
    Coat with Italian bread crumbs
    Spray baking pan add chicken and bake @ 400 until done.

    This is not my recipe...another member posted it yesterday and I made it last night. Everyone LOVED IT! Really delicious.

    Weight Watchers Parmesan Chicken:

    1/4 cup parmesan cheese, grated
    2 tablespoons dried Italian seasoned breadcrumbs
    1/8 teaspoon paprika
    1 teaspoon dried parsley
    1/2 teaspoon garlic powder
    1/4 teaspoon fresh ground pepper
    4 boneless skinless chicken breasts (about 1 pound)

    1 Preheat oven to 400 degrees.
    2 In resealable plastic bag, combine cheese, crumbs and all seasonings; shake well.
    3 Transfer mixture to plate; dip each chicken breast in cheese mixture, turning to coat all sides.
    4 Arrange on nonstick baking sheet.
    5 Bake until chicken is cooked through, 20-25 minutes.
    6 4 points per serving.

    4 points/ 168 calories

    I do a couple but i have no idea of the calories off hand so you would have to work that out yourself

    Chicken Cacciatore (serves 4+)

    3 large skinless chicken breasts ( approx 500g, bite sized pieces)
    4 cloves garlic (finely chopped)
    1 large onion (sliced)
    1 red pepper (cut into thin strips)
    1 yellow pepper (thin strips)
    1 courgette/ zucchini (cut in half then in thin strips)
    tin chopped tomatoes (200g)
    1/4 pint chicken stock
    100g black pitted olives

    brown the chicken, add peppers, onion, garlic & courgettes cook for a few mins til softened, then set aside in over proof dish (with lid)
    Add stock & tomatoes to the pan bring to the boil. remove from heat pour over chicken & pepper mixture, stir & bake for approx 45mins gas mark 6

    add olives and some sprigs of rosemary, put back n the oven for approx ten minutes.

    Serve with rice or crusty bread

    Chicken & Spinach Bake (serves 2)

    2 chicken breast fillets (cut into thin strips)
    Large bag raw spinach
    150g mushrooms (sliced) (i use a mix of chestnut & button)
    3 cloves garlic (finely sliced)
    2 slices of bread (made into bread crumbs -- any type of bread will do i usually use wholemeal)
    25 g butter (cut into thin pieces)
    30g grated cheese

    Put the Spinach into a large oven proof dish, then some (approx 1/2) garlic slices and about half the butter, next put a layer of mushrooms, then the rest of the garlic and butter, lay the chicken breast over the top, cover with foil and bake for around 30 mins
    remove foil, sprinkle with grated cheese & cover completely with breadcrumbs, put back into the oven for a further 15 minutes until the breadcrumb topping is golden and the chicken is cooked through.

    Lovely on its own or served with new potatoes.

    1) Take Italian bread crumb and mix with parmisian cheese. Roll the chicken in it and bake.

    2) Chicken breast in pan add cream of mushroom soup and bake.
