Vegan day! artichoke garlic sesame soy cabbage and butter lettuce with balsamic vinegar.
This was yesterday at 9 Taste Thai Food. I ate a lot more than this of course.

Lots of zucchini used up in these ones:
Light-ish lunch of green pea-basil pesto linguine with burst golden cherry tomatoes, white beans, roasted sweet corn & zucchini, + raspberries
Board game night pizzas: #1 with chipotle tomato sauce, leftover roasted zucchini & corn, cheddar cheese and mozzarella, slices of plum tomato, Mexican oregano
#2 with coconut curry sauce and homemade seitan "chicken" chunks, mozzarella and soft goat cheese, wilted spinach, fresh basil
Cardamom cornmeal waffles with sautéed cinnamon nectarines, vegetarian sage sausage links, fried egg

Tomorrow my workplace is participating in the RSPCA Cupcake Day fundraiser, I made vegan oreo cupcakes for it:
We don't have all those fun new oreo flavours here in Australia so the chocolate cupcakes just have regular oreos and the vanilla cupcakes have strawberry oreos. I used stevia for the frosting and another type of sweetener for the actual cupcakes so that I can actually eat them! Now I need to restrain myself tomorrow and only buy one or two of the cupcakes/desserts other people are bringing in!

I'm going to have to redo this one when less ravenously hungry, as trying to make a presentable meal and being hungry in the morning don't go together well.
Usually I slice up some peppers, onions, tomatoes and scramble with eggs and cheese or meat. Today I got inspiration to make... breakfast stuffed peppers.
Egg white, minced sweet potato (I can't think of rice as a breakfast food), onions, spinach and sweet Italian sausage stuffed into a red pepper, crushed roma tomatoes with the egg yolks on top in lieu of cheese.0 -
