    Dinner was so yummy, fish cooked in butter and garlic with avocado salsa, quinoa cottage cheese and some raw carrots.

    Mozzarella. honey cherry tomatoes, brie & artichoke pesto on broccoli pizza crust for breakfast.

    I whacked together a sashimi salad of sorts for lunch - half of which was saved for dinner as I was too stuffed.

    Thanks! So, part of the color is the seasonings and then the other component is the heat. People try to roast their veggies at way to low of a heat. I say jack that oven up! : D

    Ingredients:

    2 1" slices cauliflower
    1 tbsp EVOO
    1 tsp minced garlic
    1/2 tsp cumin
    1/2 tsp turmeric

    Method:

    Preheat oven to 500ºF. Meanwhile brush all sides of the cauliflower with oil. Sprinkle tumeric and and cumin on one side, flip it over and spread garlic. Roast for 20 minutes. Flip over and bake for another 2-3 minutes to finish getting the nice brown color. Serve hot and enjoy!

    Lunch was Apple, Brie, Honey-Glazed Walnuts & Raw Honey on Broccoli Crust Pizza and dinner was a simple fish soup with a chicken liver and bok choy added.

    Supper was a petai, cherry tomatoes, red onion scrambled eggs.

    My lunch which became my dinner because the office got lunch delivered during our meeting. It's the petai, red onion, cherry tomatoes scrambled egg with hot chilli scallop sauce & shrimp roe & scallops. Added meslum greens and fried chicken wing to round up the meal.

    I only wish there was a 'Like' button here. These were AMAZING. Congratulation to everyone who cooks at home or just makes the effort of eating healthy (even though, by looking at the pictures, I wouldn't say eating these would be such a hard task. :p ).

    Dinner was green mussels steamed in red wine, red onions, garlic, ginger and lemon. Accompanied by a mesclun salad with cherry tomatoes & brie and finished with papaya for dessert.

    Shakshouka is one of my favorites! I actually sometimes freeze the tomato mixture into portions and then thaw it in the microwave and cook it all together with an egg on busy mornings.
    I made a goat cheese, cauliflower and tomato casserole with cinnamon and thyme.
