    That's the rational approach.

    I have a big bottle of sriracha in the fridge and two backups in the pantry, so I do like the stuff. But, chipotle.

    That seems to imply that bacteria would be able to grow in sriracha at room temp. Makes me wonder, but I wouldn't want to spoil a bottle to test that theory...

    I tend toward Cholula because it is less vinegary. I haven't tried the chipotle flavor though (I have have habanero in the fridge). I ran out of Sriracha the other day. I might need to keep extras around too. ;)

    Too much vinegar for me. The only clear thing from this thread is that I need to try cholula.
