Spicy Chicken, Bean and Rice Bake

sounds good but the serving is going to be pretty small. Will leave me hungry after im done with it.0

Do you have to cook the rice first?
Nope! There was sufficient liquid in the chicken mix to cook the rice in the oven. If you think too much has boiled off while cooking the chicken, add a bit of water before stirring in the rice. But mine cooked just fine and made a nice dense bake.0 -
