Last weekends pancakes. Looking forward to the weekend!

While they look delicious, I keep thinking it looks like a diabetic coma waiting to happen.

@mikeastarcher :) Not really. That is one serving of marshallow fluff, sugar free syrup, PB2, and 1/4 of serving of Snowcaps. Not that much sugar. Although the carbs...... Looks can be deceiving. lol

I'm in the midst of moving so it's been leftovers and ... leftovers almost every meal. Trying desperately to clear all my food stuck before the move. Luckily, I had frozen some leftovers so when I am in mid-craziness & exhaustion, I just heat up the little tupperwares of lifesaving food.

Lunch at work was leftover lasagne and dinner was a medley of leftover rice, stir-fried tofu and garlic chives, stir-fried kailan and omelette.

Today I started the day late so it was bakwa sammiches and brown sugar ginger tea for lunch. Dinner was some of the leftover sammich from lunch, grilled halibut in berber spices and whole grain mustard with a jus of the marinade with some sherry and balsamic vinegar, leftover pork loin roast grilled with spices and lemongrass, some green apples drizzled with balsamic vinegar, and seafood bisque. The portions are very small but it was still a very big meal. So dessert was simpler with some green apples, blueberries and cardamon tea.

@Acg67 did you use the famous Hattie B's recipe for the Nashville fried chicken ? It has been on my list for a while, but I hadn't the chance to try it yet. Looks good!

Boring but delicious meal: grilled jerk pork, miso roasted kabocha squash, kale chips and sour cream.

Banana and pineapple snack breads with caramelized coconut crumble.
    ay2bge8s6jpq.jpg

Morning croque-boudin: artisan bread, bourbon-maple flavored apple and onions compote, Alfred fermier cheese, boudin noir and fried egg. Not pictured, but we also added some crumbled pork rinds for texture.

The pregnant lady (that would be me) needed some iron and it was a perfect fit for that.
