I have been LOVING! Salad lately. You can pack a bunch in a bowl and flavour so many ways. A good option for volume without tons of calories. Any suggestions on fun toppings? Its been basic. Grilled chicken and scallions with a greek dressing and black olives mostly. Tell me your fave salads!

I like to add some sort of fruit - apple, orange or strawberries for sweetness and crunch. Roasted pecans are sooo good. Don't buy the processed or candied kind. Just put them in a pan for a few minutes, toss around til slightly brown then cool. Avocado is delicious, hard boiled egg. I make a basic dressing for all my salads, a good vinegar, either fig balsamic or a sweet pear vinegar, plus a t. of dijon mustard and a splash of olive oil.
My absolute favorite: leftover steak, tomatoes, avocado, blue cheese and lots of greens.
Ok, now I want a good salad. But my fridge is lacking 90% of the ingredients.0 -
That steak one sounds amazingly good!!1

Spinach. Canned chicken, raspberry balsamic vingerette0

I love salad! I like a combination of sweet and hot in my salad. I put strawberries, blueberries, apple, jalapenos, banana peppers, hard boiled egg, raisins and sometimes tuna or chicken. I switch between a raspberry vinaigrette and low fat ranch dressing.0

I need color and texture on my salads with protein
Today's salad
chicken sausage
sundried tom feta
grape tomatoes
I add: egg, swiss cheese, avocado, nuts, cucumbers, olives, feta, chicken, ham/pepperoni, mini peppers, beans,sprouts---whatever veggie I have on hand.
I had this recently and will add to my salads
spinach
blueberries, raspberries and blackberries
red onion
oil/vinegar
salt pepper
I make my salad the meal!

Lettuce
Multi colored cherry tomatoes (Costco has them)
mozzarella string cheese stick - I just dice it up
Chopped raw broccoli
Diced red bell pepper
Sometimes I add chopped radish or cucumber
Texas toast tortilla strips chipotle cheddar (only adds approx 35 calories for 1 serving size)
Some kind of protein usually chicken or shrimp
Kraft mango chipotle dressing
I need to find some healthier dressing options, but this one is so good

We marinate our chicken breasts in store-bought marinades for about a day, then grill (very tasty!). So we have bunches of lettuce, and then:
Grilled chicken (4z - use a food scale )
Thinly sliced cucumber
Sliced Red Pepper (my favorite)
Grated Carrots
Red Onion
Salad-topper tortilla strips (again, measured - too easy to use too many)
2% sharp cheese or parmesean - about 1/4 cheddar and a couple T parmesean
My salad dressing choice is a mix of Tamari Sesame and Hidden Valley Light Ranch. Again, carefully measured. The mixture might sound weird, but it's very yummy.0 -
Dried raisins or cranberries, fresh grapes or bananas to add just a little sweetness and avoid dessert.
Salad dressing: fresh lemon juice, olive oil and Mrs. Dash.0 -
Think about a salad this way... there is nothing that will not go top of lettuce. Even if you have left overs on hand it may go on top of lettuce (maybe not meatloaf, lol)..
There are vegetable salads, green salads, fruit salads, taco salads, Greek salads, and the list goes on and on. I particularity like to make my salad around the type of dressing I am using or meat or topping such as vinaigrette, honey mustard, taco meat, chili, barque or grilled chicken, etc..)... Sometimes I just have to dump the veggies I have on hand, pick a flavor of cheese (add tortillia strips if it goes with) and choose flavor of dressing.. .. etc..
Salads can be never ending and can be anything and the kitchen sink!

This with blue cheese has been my favorite since I was pregnant 9 years ago. I ate it daily when pregnant. Obsession.1 -

Grilled salmon. I love crab (I even love the imitation crab even though I know it's crappy!) Sundried tomatoes. Cheddar, feta or bleu cheese. Almonds, walnuts, cranberries, sunflower seeds, chia seeds and flax seeds.
For a different type of salad dressing I sometimes use salsa.0 -

I'm kind of obsessed with salads, I always make sure to have one in the fridge, whenever I need a quick meal. My favorites are
Smoked Salmon, Avocado, Beets, Edamame, Goat Cheese, & Balsamic Vinegar (not Vinagrette)
Pumpkin Seeds, Sweet Potato, Goat Cheese, Apples, Chicken, Dried Cranberries, Apple Cider Vinegar
Broccoli, Apples, Plain Greek Yogurt, Dried Cranberries, Pumpkin Seeds, Walnuts, Apple Cider Vinegar
I always use fresh spinach or a spring mix for the base. I normally opt for high fat toppings (avocado, cheese, and nuts) instead of an actual dressing. Oh and make sure you always season your salads, just adding salt and pepper can make a salad taste a million times better.0 -
Avocado salad dressing! Using a food processor throw in 1 avocado juice of one lemon 1/4 cup white wine vinegar salt and pepper to taste....and while its blending , slowly pour in 3/4 cups of extra virgin olive oil. This way it doesn't separate when you store it. And that's it! Makes 1cup of dressing .... 2tbsp per serving0
